Oven baked fish (Psari Plaki)

If you are looking for a juicy, tasty, simple and quick method to cook the black Sea Bass, try this easy recipe. However any fish of your choice will do as well.


4 whole black Sea bass approx. to 1 and 1,1/2Lb each (descaled, gutted and scored both sides)
7 medium sized onions cut in thick slices
20 garlic gloves whole
7 scallions chopped thick
1 cup parsley roughly chopped
1 tbsp. salt
2 tsp pepper
1 tbsp. sugar
1tsp dry mint leaves
2 medium beefsteak tomatoes cut in thick cubes
6oz vegetable oil
6oz olive oil

In a big deep skillet cook all the vegetables with the oils, herbs and seasoning, except the parsley and the tomatoes.
When everything comes translucent and the garlic is soft, add the parsley and the tomatoes and continue to cook for 5 more minutes.
Transfer everything in a gastronome, add a cup of water and mix everything.
Place the fish on the top of the vegetable mix.
Stuff each fish with 2tbsp from the mixture.
Place 2 thick slices of tomato on top of each fish.
Place the pan in the oven at 400F on the lower rack and bake for 1 hour or when the fish has a nice crispy crust and the onions are caramelized.
Rest for 10 minutes and serve.
